Deer Jerky

I've been making the stuff for years going by the same old recipe time after time. What are some other good recipes that work out well? I like mine spicy.

You know.. I've never had deer jerky.. I'm surprised that my dad or step dad or any of my/their friends have never made it.. I've had every thing from lunch meats to stews but, never jerky.. Do you need anything special to make it?

Really, just a dehydrator. It takes time to make, thats really the PITA. I tend to like the "sliced" meat for jerky VS. the "ground meat" jerky. I purchased a slicer to make quick work getting the meat ready. Then, at least I do, soak the meat in marinade for a day or three. Some people use a dry rub, which can be very good too, and may be a little eaiser/less messy.

Recipe

I like the sliced meat more than ground. This is what i use for the good cuts.

I marinate for at least 24 house in fridge. The longer the better.

My wife really does not like the smell inside. Hehehe... that means me and the boys get to eat it all! So I have moved my operations to my detached garage, now that I have a fridge out there.


DEER JERKY RECIPE

? Cup Light Soy Sauce ( to cut down on the sodium content)
? Cup Soy Sauce
10 Oz. Bottle Worcester.
1Cup Teriyaki
? Cup Liquid Smoke
1 Tablespoon Old Bay Seasoning
1 Tablespoon Cajun Seasoning
1 Tablespoon Garlic Powder
3 Tablespoons Black Pepper
1 Tablespoon Texas Pete
**1 Teaspoon Hot Sauce


**I use a hot sauce such as Spontaneous Combustion or Dave?s Insanity Sauce.

Dern Joe, your recipe and mine are amazingly similar. Except for the Old Bay, and cajun seasoning, they are about the same. I use alot less Soy sauce though. And I thought I was being original............

Yeah.. I guess it's time for me to find a new recipe also. I have been using that one for years. It is a good recipe. My dad, brothers, and I have used this one for a while. Every once in a while I will omit an ingredient. Or add something different. But since the base never really changes. Well.. you get the idea. The old bay was my addition from last year. You really can't go wrong with a little old bay. The cajun spices... well they really don't make that much of a difference. (Unless they are to add more heat)

I really need to try some or the dry rubs. I have some at home that I think was purchased from Toxic Tommy's. I will have to give them a try this year. Or course it would help if I had a deer. The freezer is void of all game. Except for about seven duck breast from last season. Deer just have not been moving much down here. And when they do, it's well past midnight. We just had our first frost, so maybe they will be more active now.

Where are you at Joe? I'm in the Shenandoah Valley of Virginia. The deer here are also not moving very much. We have had maybe two decent frosts, but other wise it has been rather warm. I have seen a pile of doe's, but I have yet to see a buck in pursuit. Like last evening, I saw 18 Doe's and not one buck. Oh well, one way or another by the end of the season I will have a freezer full.

Dan, we've made jerky a lot in the past. I do really like it--probably the only way I'll eat it actually! It takes forever, and Ivan really spices his up, but it's yummy. We have just bought spice packets in the past....nice to see some new ideas.

A friend gave us some Deer Summer Sausage last year and Ivan loved it...wants to make it, but I think we will need to send that out to be done.

Since he called me last night from the mountains and already got one 7-pointer...I think we will be eating it very soon!

Dan, I'm in South Carolina. Upper part, closer to the Mountains. (probably a hill to you) You guys sound like you have some movement up there. It has just been to warm down here.

I have a couple of stands that I am hunting this year. I too will have a freezer full by the end of the season. I will probably switch to rifle in the middle of the season if I am not quite stocked up.

So Dan what do you think is up with the SV deer :confused: What part of the valley? I've spent about 19 days hunting (near Bergton) since late October and saw three bucks over that entire timeframe. Last year on same property I probably saw 20 different bucks. I saw 17 does one night and then went two days without seeing a deer.

Been wanting to make some jerky but I didn't get any deer :( About our favorite way to eat it too, Susannah ;) I passed up does in bow season and then when I ready to shoot one they were gone!

I've been using some spice packets the past few times as well, can't remember the type... picked them up at the Chantilly Sportsman Show. I don't like the ground jerky either.

Hope to get back out for a few more days before the end of year.

I don't know Mike....Rifel season, as you know, went out on Saturday. This past Tuesday I saw a "OK" looking buck standing near a doe just off Rt.11 near the Rockingham/Augusta county line. Then, I saw two really nice bucks fighting in the field behind the Western State building from I-81 in Staunton. Two different day's while hunting this year I saw 12 and 18 does,without one single buck. I think the weather has a lot to do with it. It was rather warm all season, and the last few days we had full moons, which seems to alway mess things up for what ever reason. I'm gonna hit it again during late muzzle loading. Regardless, in one way or another, I will have some meat in the freezer by year end.

Oh, I hunt in the Union Springs area mostly, but also hit some farm land around Rockingham and Augusta county.

Where are you from Mike?

Grew up in Harrisonburg but now live in Ashburn (near Leesburg). A few of us have some property and a cabin on the VA/WV line bordering GWNF. I spend as much time as possible up there during hunting season. Was going to go tomorrow but now unable. Was also trying to get out on the Hburg trip on Sunday but can't do that either. I'll get back to the Mtns next weekend with the bow and see what I can get.

Jerky w/o the Dehydrator

Haven't purchased a dehydrator yet so here is my technique.

Put oven on about 150-200 degrees, slice meat into strips. Place top rack of oven in upper most slot and bottom rack on the bottom most slot. Put large cookie sheet or tin foil on bottom rack to catch drippings. Then marinade meat for minimum of 24 hours..... 48hours is better. Stick toothpicks horizontally through one end of the meat and hang it from wires on top rack. Do this with remaining meat and just line it up one row after another. Cook for 8-10 hours or until desired consistency. If meat starts cooking too much on the outside, turn heat down and just cook it slower.

Depending on the flavor I am after, I will sometimes do a batch with Montreal Steak Seasoning and Worcheshire sauce, or I will do a hot/spicy batch similar to the recipes listed here.

If you don't have deer meat, london broil works well also.

Ever heard of "biltong" it comes from South Africa and is by far better than jerky.

Kavic, how did your year turn out? I ended up killing a spike on Merck property last week. Shot him in the nose at 52 yards, just for sake of showing off. Merck has a special use permit to kill deer, and I got Lucky to hunt one day, so I took a deer while I could. Oddly, he was 3 years old, according to teeth.

Today, I shot a doe behind the ear at 65-75 yards. Just cause I wanted to show my skills...Funny thing happened though; I was watching a field in a tree, and deer start to come down a wooded strip I was sitting in. The wooded patch is only about 30 yards wide. It was dark enough to see the field OK, but the wooded area was a little dim, even for a scope. I heard movement about 20 yards away, so I tooted my grunt call. All the sudden, a very loud, wet fart like sound bellowed from the area. I knew it was a buck, but I could not see him, even that close. So, I turned to the doe standing in the field...She dropped like a ton of bricks.

Jerky for all........

My plans to go hunting the week before Xmas were squashed due to a pinched nerve in my neck :( I was hoping to bowhunt but couldn't pull my bow back without lots of pain. I did finally get out Monday thru Wednesday this week with the muzzleoader but only had one opportunity for a shot as I pulled up to my stand. I was still moving too slow and she was moving too fast. I didn't think I could get a good enough shot so I hoped for one of her friends or relatives to come along which didn't happen.

Had a good time anyhow, my enjoyment is just being out there. We will just have to settle for beef jerky this year! I may apply for the suburban whitetail management hunting if I can get the bow pulled back.
